Vegetarian food is the food of choice for yogis and thus for retreats and a dish, which one of the participants kept telling us about on our retreat in March is scrambled tofu.
I’m not normally a fan of tofu because from past experience I’ve found that it tastes bland and isn’t very appetising. The mind tends to keep us stuck in likes and dislikes and the enlightened masters say that these likes and dislikes that we carry are the root cause of our suffering.
Anyway, I am always open to having my mind changed and endeavour to avoid suffering ad decided that I would get the recipe and make this scrambled tofu. So at our retreat reunion at my place at the beginning of April, Gina, brought the ingredients along and it was the best tofu I had eaten. Thanks, Gina! It looks like scrambled eggs. I have since made this disk myself and it tasted delicious. Here’s the recipe:
Organic tofu
1 small onion
1 teaspoon of turmeric (organic preferable)
¼ teaspoon of organic black pepper
½ organic vegetable stock cube

Mash the tofu with a fork.

Chop the onion into small pieces and saute the onion until cooked.

Add the stock

Add the tofu

Add the turmeric
Stirring as you do the above -
Put the mixture in an ovenproof dish and bake (200c) for 20 minutes.
Then enjoy!
